Moroccan chicken tagine

The ingredients of chicken tagine recipe from the moroccan food are :

  •  1 Chicken of 2 kg.
  •  1 Preserved Lemon.
  •  3 medium onions.
  •  Tablespoon chopped Parsley.
  • 2 Garlic gloves chopped.
  •  200 ml of a mixture of olive oil and vegetable oil.
  •  A small cup of water.
  •  salt.
  •  Tablespoon red pepper powder. 
  •   Tablespoon ginger.
  •  Half tablespoon Abzar.
  •  ½ teaspoon saffron.
  •  Olive.
  •  Half tablespoon cumin.
Put the chicken pieces in the Tagine and spices with the exception of cumin.
Add 1 onion peeled and sliced​​, chopped garlic and preserved lemon cut into cubes and let mix to fry.
Add water and leave to cook and then add the rest of the onions slices and section of parsley, cover the tagine and leave cooked over low heat.
When chicken is cooked add the olives and sprinkle with cumin.

Moroccan tagine chicken with carrots

Method :

Ingredients of  moroccan fish tagine :

  • Parsley.
  • Red pepper powder.
  • Red pepper.
  • ½ teaspoon cumin.

Red pepper, Laurier (laurus noboilis) and Red pepper powder.Finally,  Put tagine on the backburner for 15 minutes.

Tagine with small potatoes

Hello, the recipe of today is "Tagine with small potatoes"  from moroccan food :

  • 500 g sheep meat
  • Onion peeled and thinly sliced
  • garlic clove peeled and chopped
  • Half teaspoon ginger
  • Quarter teaspoon Abzar
  • Quarter teaspoon turmeric
  • saffron
  • Salt
  • A mixture of olive and vegetable oil
  •  Quarter tablespoon margarine
  • Tablespoon  parsley
  • 500 g small potatoes
 Put meat in a tagine, onions, spices, oil and let the mixture for a few minutes, add water and let the meat is cooked.
Boil the potatoes
in the water after washing, then peel and add salt and fry all ingredients in oil.
When the meat is cooked  remove the tagine from the fire.
put meat  in Tajin, decorate with potatoes and gravy and section of parsley.

Moroccan dishes:Tagine meat with potatoes and olives

  • 1 Kilogram of meat.
  • 1 Kilo potatoes.
  • Large onion chopped.
  • 2 tomatoes  
  • red Olive
  •  Lemon
  • Aromatics (salt, Abzar, Ginger, red pepper, saffron, 2 cloves garlic and Coriander and parsley)
  •  Adequate water

In the pot, put oil, onions and garlic with the meat.
Cook the mixture, then add spices, tomatoes chopped, water and leave for 30 minutes. 
Cut potatoes into small squares and add it to the mix.
When potatoes are cooked add olive and lemon.

Tuna Tagine

The recipe of today is a traditional moroccan food called "Tuna tagine" from the moroccan food dishes:
  •  800 grams of Tuna
  • 3 large onions
  • Tablespoon of flour
  • Handful of raisins
  • Teaspoon vinegar
  • Teaspoon honey
  • ½ teaspoon cinnamon
  • ½ teaspoon cumin
  • 4 lemons
  • Tbsp olive oil 
Put raisins in a warm water.
Mix cumin and
Crushed chili peppers, add the juice of half lemon and put Tuna in the mix for 30 minutes.
Peel onions and cut them into circles and put them in hot oil and add cinnamon and leave cooked on low heat for 10 minutes.
Add vinegar, honey, raisins drained and water and let all ingredients cook over low heat. Add pieces Tuna in the middle of cooking and when cooked put Tuna in Tajin and decorate  with
Gravy and lemon slices.

How to prepare “Tanjia” :

I offer you today, how to prepare “tanjia marrakechia” from the Moroccan cuisine, very tasty and easy to prepare.
“tanjia marrakechia” is traditional Moroccan recipe usually prepared by mens, cooked in the Moroccan oven.
Ingredients :
  • 2 kg of mutton
  • 5 cloves of garlic
  • 100 grams of ghee
  • Few of fresh saffron
  • 1 tablespoon of “baharat”
  • Two cups of water
  • Tablespoons of cumin
  • 2 lemons pickle.
Method :
Put all ingredients in “Tanjia”: meat, spices .. And add water.

Chicken with lemon and olives

Method :

Hello, today i want to show you how to cook a roasted chicken :
recipe of roasted chicken :
Ingredients :
  • 2 Chickens  of 1/2 kilo.
  • 4 medium onions grated.
  • 4 cloves garlic mashed.
  • Workshop saffron dissolved in ¼ cup warm water.
  • 3 tablespoons butter + half cup of vegetable oil.
  • 3 tablespoons salty butter.
  • Salt – white and black pepper – a small pinch of ginger powder
  • eggs and almonds for garnish
Method :

Before, mix chicken with a pinch of salt and cut limes and wash it with water.
Keep chicken in saucepan with:
Onion, garlic, salt and saffron and spices + ghee and oil and leave about 10 minutes and then add the saffron and 1 liter of water and let it cook on medium heat for an hour.
Pull the chicken and put it in the the oven tray,scrub chicken with butter  and introduce it in the oven for Roasting .

Dish of veal with Dried plum

Hello, today i want to present for you how to prepare a “dish of veal with dried plums ” from the traditional moroccan dishes :
  • 1 kilo veal
  • Onions
  • Parsley
  • Bharat
  • Salt
  • Oil
  • Little cinnamon
  • dry Plum
  • A little sugar for plum
- To decorate:
  • Almond poached
  • Sesame
  • 2 poached eggs divided halves.
